Equipment
- Smoker, charcoal grill or gas grill
Ingredients
Chicken
- 3 lbs Chicken wings
- Ā¼ cup McCormick Montreal Steak Seasoning (Approximate amount)
- 1 bunch Green onions (scallions) chopped for garnish
Blue Cheese Dip
- 1 cup Blue cheese crumbles
- Ā½ cup Sour cream
- Ā¼ cup Mayonnaise
- 1 tbsp Fresh lemon juice
- Ā¼ tsp Salt
- Ā¼ tsp Freshly ground black pepper
Buffalo Sauce
- 1 cup Franks Red Hot Buffalo Sauce
- ā cup Honey (Use less honey for more spice)
- 2 tbsp Brown sugar
Instructions
Prepare Chicken
- Arrange wings on wire rack over baking sheet, skin side down. Pat wings dry with paper towels. Generously coat with Montreal Steak Seasoning
- Flip wings to skin side up and repeat drying and applying rub.
- Place baking sheet in the lowest part of your refrigerator and allow wings to dry, uncovered, for at least 1 hour.
Prepare Blue Cheese Dip
- Add all ingredients to a small bowl except blue cheese and stir to combine.
- Add blue cheese to mixture and stir until combined.
- Store in refrigerator until serving. Before serving, sprinkle a few more blue cheese crumbles on top.
Smoke Chicken
- Preheat smoker to 180-200 degrees. If using pellet grill, set to smokeboost (Weber), Smoke (pitboss), super smoke (traeger), low smoke (camp chef) using strong flavor such as hickory. if using gas grill light one burner to lowest setting and adjust until 180-200 degrees.
- For additional smoke flavor in a pellet smoker or on a gas grill, use mini minion method (link to video coming soon).
- Add wings to smoker skin side up. Close lid and let cook for 1 hour.
- After one hour, increase temperature to 375F. Cook an additional 15 minutes.
- After 15 minutes, generously glaze skin side with sauce and cook 5 minutes more.
- Remove from smoker, drizzle additional sauce, garnish with sliced scallions
- Serve with remaining sauce and blue cheese dipĀ
