Ingredients
  

  • 6 oz Gruyere cheese
  • 6 oz Colby Cheese
  • 6 oz Cheddar Cheese
  • 2-4 sticks Butter
  • 2 tbl Butter
  • 2 tbl Flour
  • 1 ¼ cup Milk Warm milk before adding
  • ¾ tsp Salt
  • ¼ tsp White pepper Regular pepper works too
  • 1 tbl Dijon mustard
  • ¼ tsp Freshly ground nutmeg
  • 1 loaf Sourdough bread
  • ¼ cup Chopped parsley Optional

Instructions
 

Prepare Cheese

  • Shred all cheese into separate piles

Clarified Butter

  • Melt 2-4 sticks of butter over medium heat
  • Use a spoon to carefully skim milk solids from top
  • After all milk solids from top are skimmed, pour through cheesecloth inside a fine mesh strainer

Béchamel Sauce

  • Melt 2 tablespoons of butter in a small sauce pan
  • Add 2 tablespoons of all purpose flour and whisk to incorporate cooking for 1-2 minutes until raw flour smell is gone
  • Add warm milk slowly whisking the entire time
  • Cook 6-7 minutes until thickened
  • Turn off heat and whisk in salt, white pepper, dijon mustard and nutmeg

Grilled Cheese

  • Melt 1-2 tablespoons of clarified butter in heavy pan such as a cast iron pan
  • Coat 1 slice of sourdough bread with béchamel sauce and place in pan
  • Add gruyere cheese to bread – pile it high
  • Coat another slice with béchamel sauce and place béchamel sauce side down
  • After 1-2 minutes when bottom bread is nicely toasted remove from pan, melt 1-2 tablespoons of butter, and flip sandwich
  • Add mix of colby and cheddar cheese to top of sandwich
  • Top with another slice of bread with béchamel sauce
  • After 1-2 minutes when bottom bread is nicely toasted remove from pan, melt 1-2 tablespoons of butter, and flip sandwich
  • Garnish with parsley if desired
